A rich, sweet mixture of berries in a vanilla cheesecake. A local farmer harvests the best berries here, including the golden raspberries. If you can find them, they are great for baking.

Ingredients
  • Vanilla crust - see crust page
  • 1 pint blackberries
  • 1 pint blueberries
  • 1 pint mixed raspberries
  • 2 pounds Philly cream cheese, softened
  • 1 1/4 cup sugar
  • 4 Tbsp. flour
  • 5 large eggs
  • 1 1/2 tea. vanilla extract
  • 1/2 cup heavy cream

Directions
  1. Rinse berries, let dry.
  2. Preheat oven to 500^.
  3. Blend cream cheese, sugar and flour until smooth.
  4. Add eggs one at a time.
  5. Add vanilla and cream, mix thoroughly.
  6. Layer berries evenly in prepared pan.
  7. Pour filling over berries.
  8. Bake at 500^ for 15 minutes.
  9. Reduce temp. to 250^ and continue baking for 1 hour.
  10. Let cool and refrigerate before serving.
