Peach Chicken and Couscous

- 1 box (10 ounces) couscous shopping list
- 3 teaspoons olive oil, divided use shopping list
- 1 can (16 ounces) diced peaches in juice or light syrup shopping list
- 1 1/2 tablespoons brown sugar shopping list
- 1 1/2 tablespoons cider vinegar or red-wine vinegar shopping list
- 2 cups finely chopped cooked chicken breast (from a rotisserie chicken, packaged or homemade) shopping list
- 1 teaspoon ground cinnamon shopping list
How to make it
- Cook couscous according to package directions, using 1 teaspoon oil. Meanwhile, drain peaches, reserving 1/2 cup liquid (add water if needed to make 1/2 cup). Heat remaining oil in a medium skillet over medium-low heat. Add brown sugar, vinegar and peach liquid. Bring to a simmer, then stir in chicken and peaches and cook until heated through, 2 to 3 minutes. Dish couscous into serving bowls and top with peach-chicken mixture. Sprinkle with cinnamon.
