Borsch Recipe
A friend give me this recipe after serving but I have never made it.The meal was great .Dark pumpernickle bread with chipped beef cream cheese spread blended in good with the dfferent tastes of the borsch.

Ingredients
  • 2 tbls olive oil
  • 1 cup chopped onions
  • 3/4 cup chopped celery
  • 5 cups shreaded beets
  • 2 cups shreaded carrots
  • 2 cups shreaded potato
  • 2 cups crushed tomato and juice
  • 3 cups shreaded cabbage
  • 2 tbls lemon juice

Directions
  1. In large dutch oven heat oil. Add onions,celery,carrots, beets,potatoes,and tomatos.Cover and simmer for15-20 min.Add cabbage and lemon juice cover and simmer for 30min. or until cabbage is done.Serve hot with salt & pepper shakers and bread.
  2. Only stir just before serving.
