Ingredients

1 SMALL/MED CHICKEN

1 MED ONION CHOPPED

1 CUP CHOPPED CELERY

1/2 BUNCH CHOPPED PARSLEY

5 CHICKEN CUBES

1/2 CUP RICE

1/2 cup chopped potatoe/carrotts/OPTIONAL

1 CUP MILK-(OR )2 TABLSPNS CREAM

1 CUP MASHED POTATOE

2 TABS SPNS FLOUR /Blend with a little water to a paste.

Salt /pepper /Bay leaf/pinch mixed herbs

Directions

Wash Chicken and place in Stock pan to boil.Just covered with stock or water.Add first 7 ingrediants and simmer.Stir Gently..1 hr.Skim We,ll during cooking.

.Check Chicken if cooked .Remove from stock and take off- the white meat.

Disgard any bones or skin.

Re -simmer stock .Add last 4 ingrediants.

When thick,add meat at last minute before serving.

If wished you can add small dumplings.

Thses can be placed on top soup,with lid on 1 minute, before ready to serve. Once you lift lid ---SERVE.

EASY BUTTER DUMPLINGS.

Rub 1 tablespoon butter,into 1 /2 cup (SR Flour.)Salt/Pepper/Mix with water to soft dough.Drop from teaspoon, into boiling liquid,and put lid on 1 min only.Serve and Enjoy.
