Ginger Chops Recipe
This is a yummy lamb chop casserole passed down from my nan. I do this in the slow cooker for a few hours or until tender and serve it with 'smashed' roast potatoes, beans and carrots

Ingredients
  • MARINADE
  • 2 tbs flour
  • 1 tbs soft brown sugar
  • 1/4 tbs mustard powder
  • 1/4 tbs ground ginger
  • 1/4 tbs curry powder
  • 1/4 tbs all spice
  • Salt and pepper to taste
  • 2 tbs tomato sauce
  • 2 tbs white vinegar
  • 1 cup water
  • a splash of worcestershire sauce
  • Sometimes if I think there isnt enough liquid, I just make it quickly again and pour more in. It's so quick to mix up
  • Lamb shanks or forequater lamb chops
  • (Beef osso bucco or gravy beef works well too)

Directions
  1. Simply mix all the marinade ingredients together, allow meat to sit in the mix for at least and hour, move to slow cooker and tip entire lot in on low. Cook until tender..
  2. I generally have it on by about midday to serve at 6pm but on high in the slow cooker it will cook faster.
  3. adjust marinade amounts in correct proportions and chops to make more or less.
  4. I sometimes refridgerate excess gravy and use it the following night to poach more chops or even an egg!!!
  5. Serve with potato to soak up all the juices, and steamed veges!!
