Esplanade Chicken Salad

- 4 Tablespoons mayonnaise (do not subsitute salad dressing) shopping list
- 1 teaspoon Dijon mustard shopping list
- 1 Tablespoon dried parsley shopping list
- 1/2 teaspoon celery seed shopping list
- 2 stalks of celery, chopped small shopping list
- 2 green onions, chopped green and bulbs shopping list
- 2 or 3 small chicken breast with skin and bone shopping list
- 1 cup chicken broth shopping list
- water to cover shopping list
- 1 chicken bouillon cube, crushed shopping list
How to make it
- Mix the mayonnaise, mustard, parsley and celery seed. Add the celery stalks and green onion. Put in the refrigerator to marinate. Meanwhile boil the chicken breasts in the chicken broth and add enough water to cover along with the crushed bouillon cube. Bring to a boil and then simmer slowly for 40 minutes. Remove from the broth and cool. When cool, debone and cube the meat throwing away the skin and bones. Add the meat to the marinated ingredients and let it refrigerate for at least 2 hours.
