Beef Shepherds Pie

- 1 lb. red potatoes,cut in 1/8" slices (2-1/2c) shopping list
- 1 tsp dried thyme shopping list
- 1 lb ground beef shopping list
- 1 pkg (10 oz) frozen mixed vegetables shopping list
- 1 pkg. (1oz) herb gravy mix for beef shopping list
- 3/4 c shredded cheddar cheese shopping list
How to make it
- Preheat oven to 400 degrees. Coat 1-1/2 qt. baking dish with spray;reserve.
- Line jellyroll pan with foil.Toss potatoes with oil and 1/4 tsp thyme;spread on pan. Bake till tender,20-25 mins
- Meanwhile,coat nonstick skillet with cooking spray. Heat over med. heat .Add the beef;cook till browned ,5 mins. Add vegetables and 1/4 tsp salt; cook 2 mins. Add gravy mix.3/4 c water and remaining thyme. Cook 5 mins;transfer to baking dish Top with potatoes. Bake until browned,15 mins . Top with cheese. Bake until melted, 3 mins.
