MomMyths Chicken Patties

- ~ 1.5 kg ground chicken (~3 lbs) shopping list
- For each 500 g (~1 lb) of chicken meat: shopping list
- 1/3 cup bread crumbs (or matza meal, or oat bran, or other filler) shopping list
- 1 egg shopping list
- 2T soy sauce shopping list
- 1/4 tsp salt. (I use more) shopping list
- ground pepper shopping list
- 1 tsp olive oil shopping list
- Optional additions - for each 500 g meat) shopping list
- 2T fresh parsley, chopped (or any other herb you're in the mood for - basil, oregano, marjoram, dill, etc.) shopping list
- chopped scallion or onion shopping list
- finely chopped red/yellow/green/etc. pepper shopping list
- 1/4 tsp ground rosemary shopping list
- 1/2 tsp garlic powder shopping list
- 1 tsp onion powder shopping list
- Canola, sunflower or soy oil for browning shopping list
How to make it
- Mix ingredients together.
- Form patties. If you have time, chill for ~an hour or so. If you like rare meat, make thick patties.
- Heat a large frying pan and add oil for browning the patties.
- Brown the patties on each side on medium high heat. ~ 3-5 min/ side.

- If you like your meat more thoroughly cooked, give them longer per side, or once browned, move to a baking dish and place in a 350 F oven for 10-15 minutes - or for however long you're supposed to cook hamburgers/ patties.

- I prepare this dish for Shabbat, so I undercook the patties, knowing that they are going to sit on top of a hot plate for an hour or so. This Friday, I cooked up some onions, zucchini, and fresh mushrooms in the skillet after browning the patties and used that as a bed to keep the patties from drying out on the hot plate. I served the patties with potato kugel. They were quite rare, but everyone liked them that way!
