How to make it

  • PREHEAT THE OVEN TO 220 DEGREES.
  • WELL GREASE 12 MUFFIN TINS.
  • SIFT THE FLOUR, BAKING POWDER, BAKING SODA, BROWN SUGAR AND SALT INTO A LARGE BOWL. STIR THROUGH THE BRAN FLAKES AND MAKE A WELL IN THE CENTER.
  • IN A JUG, MIX TOGETHER THE MILK, EGG, VANILLA, MASHED BANANA AND GOLDEN SYRUP.
  • STIR INTO THE DRY INGREDIENTS WITH THE MELTED BUTTER AND CHOPPED DATES.
  • DEVIDE EVENLY AMONG 12 WELL-GREASED MUFFIN TINS AND TOP WITH A WALNUT/PECAN.
  • BAKE FOR 18-20MINS UNTIL WELL RISEN AND GOLDEN.
  • COOL IN THE TINS FOR 5MINS BEFORE SERVING.
  • THESE FREEZE WELL IN PLASTIC BAG IN THE FREEZER.
