Banana Date and Bran Muffins

- 2 CUPS flour shopping list
- 1TSP baking powder shopping list
- 2TSP baking soda shopping list
- 1/2 CUP brown sugar (firm brown is best!) shopping list
- 1/2 TSP salt shopping list
- 1 CUP bran flakes OR natural bran shopping list
- 1 CUP milk shopping list
- 1 egg shopping list
- 1 TSP vanilla essence shopping list
- 2 LARGE bananas WELL MASHED shopping list
- 1/4 CUP golden syrup shopping list
- 125G butter, MELTED AND COOLED shopping list
- 1 CUP FINELY chipPED dates (FRESH OR DRIED) shopping list
- 12 walnuts OR pecans shopping list
How to make it
- PREHEAT THE OVEN TO 220 DEGREES.
- WELL GREASE 12 MUFFIN TINS.
- SIFT THE FLOUR, BAKING POWDER, BAKING SODA, BROWN SUGAR AND SALT INTO A LARGE BOWL. STIR THROUGH THE BRAN FLAKES AND MAKE A WELL IN THE CENTER.
- IN A JUG, MIX TOGETHER THE MILK, EGG, VANILLA, MASHED BANANA AND GOLDEN SYRUP.
- STIR INTO THE DRY INGREDIENTS WITH THE MELTED BUTTER AND CHOPPED DATES.
- DEVIDE EVENLY AMONG 12 WELL-GREASED MUFFIN TINS AND TOP WITH A WALNUT/PECAN.
- BAKE FOR 18-20MINS UNTIL WELL RISEN AND GOLDEN.
- COOL IN THE TINS FOR 5MINS BEFORE SERVING.
- THESE FREEZE WELL IN PLASTIC BAG IN THE FREEZER.
