Banana Date And Bran Muffins Recipe
These are the best ever banana muffins I have ever tasted. They are solid and chewy and can be frozen, so make 2 batches! The better the brown sugar, the better.

  • 2 CUPS FLOUR
  • 1TSP BAKING POWDER
  • 2TSP BAKING SODA
  • 1/2 CUP BROWN SUGAR (firm brown is best!)
  • 1/2 TSP SALT
  • 1 CUP BRAN FLAKES OR NATURAL BRAN
  • 1 CUP MILK
  • 1 EGG
  • 1 TSP VANILLA ESSENCE
  • 2 LARGE BANANAS WELL MASHED
  • 1/4 CUP GOLDEN SYRUP
  • 125G BUTTER, MELTED AND COOLED
  • 1 CUP FINELY CHIPPED DATES (FRESH OR DRIED)
  • 12 WALNUTS OR PECANS

Directions
  1. PREHEAT THE OVEN TO 220 DEGREES.
  2. WELL GREASE 12 MUFFIN TINS.
  3. SIFT THE FLOUR, BAKING POWDER, BAKING SODA, BROWN SUGAR AND SALT INTO A LARGE BOWL. STIR THROUGH THE BRAN FLAKES AND MAKE A WELL IN THE CENTER.
  4. IN A JUG, MIX TOGETHER THE MILK, EGG, VANILLA, MASHED BANANA AND GOLDEN SYRUP.
  5. STIR INTO THE DRY INGREDIENTS WITH THE MELTED BUTTER AND CHOPPED DATES.
  6. DEVIDE EVENLY AMONG 12 WELL-GREASED MUFFIN TINS AND TOP WITH A WALNUT/PECAN.
  7. BAKE FOR 18-20MINS UNTIL WELL RISEN AND GOLDEN.
  8. COOL IN THE TINS FOR 5MINS BEFORE SERVING.
  9. THESE FREEZE WELL IN PLASTIC BAG IN THE FREEZER.
