Gnocchi with a Fresh Basil Bacon Cheese sauce

- 1lb potato gnocchi shopping list
- 5 strips bacon cut into lardoons(1/3 inch strips across the grain) shopping list
- 1/2 cup diced onion shopping list
- 1-3 tbsp oil as needed shopping list
- 3 tbsp flour shopping list
- 2 cups heavy cream shopping list
- 1 cup milk shopping list
- 1/2 cup grated mozzarella shopping list
- 1/4 cup grated parmesan or other hard Italian cheese(asiago would be great) shopping list
- 12-14 leaves fresh basil cut into 1/4 inch strips shopping list
- 1 tsp garlic powder shopping list
- 1 dash cayenne shopping list
- salt and pepper to taste shopping list
How to make it
- render the bacon in a mid size to large skillet(big enough to hold the sauce and gnocchi)
- put a 2-3 quart pot filled 2/3rds to on high heat
- once bacon is mostly rendered add your onion and let that cook till translucent
- add flour and enough oil to form a mixture similar to wet sand(yes making a roux) and let cook over medium heat till it gets a slight browness and nutty odor
- add heavy cream, milk and whisk until smooth
- let cook for a minute or four, over medium
- add gnocchi to the pot of what should be boiling water
- add cheese, and spices to your cream mixture and stir in till well incorporated
- add basil and stir into sauce
- as your gnocchi start to float to the top of the water they're done take them out with a skimmer or slotted spoon and add them to your sauce
- once all the gnocchi are added, mix them into the sauce and adjust your seasoning to taste
