How to make it

  • render the bacon in a mid size to large skillet(big enough to hold the sauce and gnocchi)
  • put a 2-3 quart pot filled 2/3rds to on high heat
  • once bacon is mostly rendered add your onion and let that cook till translucent
  • add flour and enough oil to form a mixture similar to wet sand(yes making a roux) and let cook over medium heat till it gets a slight browness and nutty odor
  • add heavy cream, milk and whisk until smooth
  • let cook for a minute or four, over medium
  • add gnocchi to the pot of what should be boiling water
  • add cheese, and spices to your cream mixture and stir in till well incorporated
  • add basil and stir into sauce
  • as your gnocchi start to float to the top of the water they're done take them out with a skimmer or slotted spoon and add them to your sauce
  • once all the gnocchi are added, mix them into the sauce and adjust your seasoning to taste
