Gnocchi With A Fresh Basil Bacon Cheese Sauce Recipe

Ingredients

1lb potato gnocchi

5 strips bacon cut into lardoons(1/3 inch strips across the grain)

1/2 cup diced onion

1-3 tbsp oil as needed

3 tbsp flour

2 cups heavy cream

1 cup milk

1/2 cup grated mozzarella

1/4 cup grated parmesan or other hard italian cheese(asiago would be great)

12-14 leaves fresh basil cut into 1/4 inch strips

1 tsp garlic powder

1 dash cayenne

salt and pepper to taste

Directions

render the bacon in a mid size to large skillet(big enough to hold the sauce and gnocchi)

put a 2-3 quart pot filled 2/3rds to on high heat

once bacon is mostly rendered add your onion and let that cook till translucent

add flour and enough oil to form a mixture similar to wet sand(yes making a roux) and let cook over medium heat till it gets a slight browness and nutty odor

add heavy cream, milk and whisk until smooth

let cook for a minute or four, over medium

add gnocchi to the pot of what should be boiling water

add cheese, and spices to your cream mixture and stir in till well incorporated

add basil and stir into sauce

as your gnocchi start to float to the top of the water they're done take them out with a skimmer or slotted spoon and add them to your sauce

once all the gnocchi are added, mix them into the sauce and adjust your seasoning to taste
