How to make it

  • Meatballs: Mix mince, onion, salt, pepper, curry powder and sauce together.
  • Shape into small balls.
  • Fry in butter/oil until cooked.
  • Sauce: Saute carrots, onions and capsicum/bell pepper in butter/oil.
  • Blend cornflour, water, sauces and pineapple juice together.
  • Add to vegetables with stock cube and stir until sauce thickens.
  • Return meatballs to pan along with pineapple and cucumber.
  • Simmer for 10 mins.
  • Serve with rice.
