Red Enchilada Sauce

- Large can crushed tomatoes shopping list
- 2 medium or 1 large onion, finely chopped shopping list
- 4-6 cloves garlic, finely chopped shopping list
- Can of chipotles (7 oz for mild, 14 oz for hotter), chopped, with sauce reserved shopping list
- bay leaf shopping list
- 2 capfuls liquid smoke shopping list
- 1-2 T cumin shopping list
- 2 T dried ground new mexico chiles shopping list
- pinch of oregano shopping list
- salt shopping list
- pepper shopping list
- small handful sugar shopping list
- splash of olive oil shopping list
- cayenne if greater heat is desired shopping list
How to make it
- Saute the onion and garlic, add everything else, with sufficient water to cover. Simmer for 1-2 hours, adding water if it starts to dry out. Cook to desired consistency, adjusting to taste. Ultimately you may want to put an immersion blender to it to even out the consistency.
