Pineapple Marquise- Frozen Pineapple Dessert Recipe

Ingredients
  • 2 small fresh ripe pineapples
  • sugar
  • 1 1/4 cups pineapple juice
  • 3/4 cup water
  • 1 cup sugar
  • rind and juice of 1 lemon
  • 1 1/4 cups cream to be whipped
  • 3 Tbs kirsch

Directions
  1. Cut each pineapple in 1/2 lengthwise leaving on green tops.
  2. Cut pulp out of pineapple shell discarding hard core and being careful not to cut through shell.
  3. Sprinkle insides of shell with a bit of sugar and set in refrigerator
  4. until ready to use.
  5. Chop pineapple flesh to a fine texture.
  6. Add pineapple juice, water, sugar, and lemon rind .
  7. Bring mixture to a boil and boil 5 minutes.
  8. Then strain and add the lemon juice..
  9. Freeze strained mixture for 4 hours.
  10. Then break up with a fork and fold in the whipped cream and kirsch.
  11. Return to freezer.
  12. Before serving, spoon mixture evenly into the 4 pineapple
  13. shells and serve immediately.
  14. Garnish with mint leaves, fresh strawberries if desired

How about clearing a space in the middle of your Living Room floor. Spread out a beach towel on the Living Room floor, put a couple of tall lights around the beach towel to imitate the sun. Sit on any colorful cushions or pillows you have in your house & make or buy the little paper umbrellas or put the mint & strawberries on toothpicks & stick them into the remaining fleshy part of your pineapple glasses.
Splurge & buy a couple of blow up beach balls & some construction paper. Get the family into the spirit by having them each draw &/or cut something from the construction paper that reminds them of the beach. Such as a bright sun, blue ocean waves, fish or star fish. Make pirate hats out of newspaper & swords from cardboard boxes, cut & pasted together. You could even use some of the red construction paper on the swords to let the pirates of any age pretend they slayed deadly sea serpents.
And using a cardboard box you can make to look like a treasure chest, make the treasure your lunch & dinner. A whole precooked chicken that can be pulled apart by hand, a french or Italian loaf of bread that can be torn by hand, cheese (String Cheese), little carrots, celery with cream cheese in the groove with raisins on the cream cheese (pretend ants) & somores that were baked so everything is melted together & then refrigerated. Not only are they easier to eat & won't burn your mouth, they taste even better after they've been melted then refrigerated YUM!
Just a thought. A kind of pirate picnic at the beach on the Living Room floor, regardless of what the weather is doing outside.
