Split Pea Soup

- 1 lb dried split peas shopping list
- 1 ham hock (two if they don't look like they have much meat) shopping list
- 2/3 cup coarsely chopped onion shopping list
- 1/4 cup chopped carrot shopping list
- 1/2 cup chopped celery shopping list
- 2 parsley sprigs shopping list
- 2 cloves garlic shopping list
- 1 bay leaf shopping list
- 1/2 teaspoon sugar shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon dried thyme shopping list
- 1/8 teaspoon pepper shopping list
- 1 dried hot chile shopping list
- 2 cans (14 oz ) chicken broth shopping list
How to make it
- In a large pot combine peas and 1 qt of water; bring to boiling. Reduce heat and simmer covered for 45 minutes. Add water if necessary.
- Add all the rest of the ingredients. Simmer covered for 1 1/2 hours or until everything breaks up.
- Remove ham hocks and cut the meat off of them
- Return to kettle and reheat.
- I like to eat this with a couple of slices of crusty bread and a bottle of Tabasco or similar hot sauce.
