Ingredients
  • 1 lb dried split peas
  • 1 ham hock (two if they don't look like they have much meat)
  • 2/3 cup coarsely chopped onion
  • 1/4 cup chopped carrot
  • 1/2 cup chopped celery
  • 2 parsley sprigs
  • 2 cloves garlic
  • 1 bay leaf
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon pepper
  • 1 dried hot chile
  • 2 cans (14 oz ) chicken broth

Directions
  1. In a large pot combine peas and 1 qt of water; bring to boiling. Reduce heat and simmer covered for 45 minutes. Add water if necessary.
  2. Add all the rest of the ingredients. Simmer covered for 1 1/2 hours or until everything breaks up.
  3. Remove ham hocks and cut the meat off of them
  4. Return to kettle and reheat.
  5. I like to eat this with a couple of slices of crusty bread and a bottle of Tabasco or similar hot sauce.
