How to make it

  • In a large pot combine peas and 1 qt of water; bring to boiling. Reduce heat and simmer covered for 45 minutes. Add water if necessary.
  • Add all the rest of the ingredients. Simmer covered for 1 1/2 hours or until everything breaks up.
  • Remove ham hocks and cut the meat off of them
  • Return to kettle and reheat.
  • I like to eat this with a couple of slices of crusty bread and a bottle of Tabasco or similar hot sauce.
