Lemon Parsley Couscous

- 1 cup chicken broth shopping list
- 1 tablespoon butter shopping list
- 1 cup couscous shopping list
- 1/4 cup packed fresh parsley leaves, minced shopping list
- juice and zest of 1-2 lemons (depending on size) shopping list
- salt & pepper to taste shopping list
How to make it
- In a small heavy saucepan bring the chicken broth and butter to a boil.
- Add couscous, stir, then remove the pan from heat.
- Let the mixture stand, covered, for 5 minutes.
- Fluff it with a fork, then stir in the parsley, lemon juice, and salt and pepper to taste.
