How to make it

  • Heat the oil in a pan and cook the chicken cubes until white, remove with a slotted spoon and put the chicken to one side.
  • Add the fresh ginger to the pan and cook on a low/medium heat for 1 - 2 minutes (stirring all the time so it doesn’t burn), until the oil has been absorbed into the ginger, add the garlic into the oil until softened (only a few seconds).
  • Add the chopped chilli and all the other spices, stirring well in to make a paste.
  • Add the cooked chicken back to the pan and mix well coating all the chicken pieces with the paste. Add chopped coriander leaves (I chop with scissors - makes it much easier)
  • Add about 1/4 pint water and the lemon juice, bring to a boil then cover tightly with a tight lid and cook on a low heat/simmer for 15 minutes, then turn all the chicken pieces over and cook for a further 15 mins.
  • Serve with spiced Basmati rice.
