Chicken Corriander

- 2 chicken breasts (skin off) cubed shopping list
- 3 - 5 cloves garlic (depending on your taste) shopping list
- 1 tablespoon of fresh ginger blended with 1 tbsp of water (the stuff in tubes is good enough) shopping list
- 7oz fresh coriander (a large bunch or 3 small packets) shopping list
- 1/2 fresh green or red chilli (or more if you like it hot) finely chopped (seeds make it hotter) shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1tsp ground cumin shopping list
- 1tsp ground coriander shopping list
- 1/2 tsp turmeric shopping list
- 4 - 5 tablespoon lemon juice (fresh or bottled is fine) shopping list
- ¼ to ½ pint water (depending on how much sauce/gravy you like) shopping list
- 4 tablespoon vegetable oil shopping list
How to make it
- Heat the oil in a pan and cook the chicken cubes until white, remove with a slotted spoon and put the chicken to one side.
- Add the fresh ginger to the pan and cook on a low/medium heat for 1 - 2 minutes (stirring all the time so it doesn’t burn), until the oil has been absorbed into the ginger, add the garlic into the oil until softened (only a few seconds).
- Add the chopped chilli and all the other spices, stirring well in to make a paste.
- Add the cooked chicken back to the pan and mix well coating all the chicken pieces with the paste. Add chopped coriander leaves (I chop with scissors - makes it much easier)
- Add about 1/4 pint water and the lemon juice, bring to a boil then cover tightly with a tight lid and cook on a low heat/simmer for 15 minutes, then turn all the chicken pieces over and cook for a further 15 mins.
- Serve with spiced Basmati rice.
