Zombies Extravagent Lamb Stew

- boneless leg of lamb roast Leftovers Cubed shopping list
- 1 sweet potato, Skinned And Cubed shopping list
- 1/2 Large sweet onion Diced shopping list
- 2 cloves garlic Crushed And Minced shopping list
- 1/2 can black beans Rinsed And Drained shopping list
- 6-8 Large mushrooms Chopped As You Like( choose a mushroom that you enjoy thouroughly) shopping list
- 6-8 baby carrots Chopped shopping list
- 1/2 Cup red wine,1/2 Cup beef broth shopping list
- salt,pepper,garlic powder To Taste. shopping list

- 2 Cups water shopping list
- 2 Cups Cicken broth shopping list
- 2 1/2 Cups beef broth shopping list
- basil & oregano/ salt & pepper to taste. shopping list
How to make it
- After a delicious boneless leg of lamb roast, take the leftover, as much as you care to add. Pour your Broth Mixture into a large pot and simmer over medium heat. Add lamb to the broth for about 15 minutes. Remove lamb and Cut into thick slices and then cube into chunks fitting for a stew. Add the Lamb and the sweet potato into the broth.
- In a non stick pan, add your onion and mushroom with a little olive oil, wait until the onions start to give out there flavour and add the garlic. After 2 minutes add your red wine and beef broth, and let it simmer on low heat until it all mixes nicely, stiring regularly.
- Add your beans and carrots,and mushrooms to the mix now.
- Simmer on low-medium heat for about 30 minutes.
- for a twist i like to add curry, and a little chopped cilantro and mint. and some fresh lemon juice.
