A beautiful beef curry that you can adjust to taste - I like the coconut milk addition - I hope you enjoy this dish - it is very nice and great with naan breads!

Ingredients
  • 1 kg beef, cut into cubes
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 2 tablespoons curry powder (adjust to taste)
  • 2½ cups beef stock
  • 1 x 400 mL can coconut milk (this makes it nice and different)
  • 2 tablespoons brown sugar

Directions
  1. Season beef with salt, pepper and 2 tablespoons of oil,
  2. Heat a fry pan.
  3. Brown the beef in batches. Remove and place in casserole dish or slow cooker
  4. .
  5. Reduce heat, add onion and garlic and cook for 1-2 minutes.
  6. Add curry powder and stir until onion is coated.
  7. Stir in stock and coconut milk and continue to stir until boiling.
  8. Add to casserole dish (or slow cooker) and stir to combine ingredients.
  9. If using a casserole dish, place the dish on stove top over low heat, partially cover and simmer, stirring occasionally until meat is tender. Add water if necessary.
  10. Serve with rice or naan bread - both if you like :-)
