Ingredients
  • 4 PIECES SKINLESS CHICKEN THIGHS
  • 4 PIECES SKINLESS CHICKEN LEG PORTION.
  • 4 PIECES SKINLESS CHICKEN BREAST
  • 4 SMALL WHOLE RED FRESH CHILLIES
  • 1/4 CUP MELTED BUTTER
  • 2 TSP GROUNDED GARLIC AND GINGER
  • 2 TSP FINE CHILLIE POWDER
  • SALT TO TASTE
  • 1 SMALL CAN OF TOMATO PUREE

Directions
  1. WASH AND DRAIN CHICKEN PIECES WELL
  2. PUT MELTED BUTTER INTO MEDIUM FLAT POT AND HEAT.
  3. TO POT ADD FRESH RED CHILLIES AND BRAISE
  4. ADD CHICKEN
  5. ADD GARLIC AND GINGER AND REST OF SPICES.
  6. TOSS CHICKEN INTO SPICES COATING WELL
  7. BRAISE ON MEDIUM HEAT UNTIL WATER EVAPORATES
  8. ADD TOMATO PUREE AND STIR IN.
  9. CLOSE LID AND LEAVE TO SIMMER.
  10. COOK UNTIL OIL RISES TO TOP AND CHICKEN IS COOKED.
  11. FRY POTATO WEDGES TILL GOLDEN BROWN
  12. ADD AND TOSS AROUND CHICKEN PLATTER WHEN BEING SERVED.
  13. LASTLY ADD CHOPPED FRESH CORIANDER.
  14. SERVES WELL WITH INDIAN FLATTEN BREAD (ROTI)
  15. OR LIGHTLY GARLIC BUTTERED HEATED PITA BREAD SPRINKLED WITH DRY PARSLEY.
