PORK LASAGNA WITH THREE CHEESES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Irvine Estate in Allen, Texas in 1994.

Ingredients
  • 2 tablespoons olive oil
  • 1 pound ground pork
  • 1 large white onion finely chopped
  • 1 red bell pepper finely chopped
  • 3 garlic cloves minced
  • 1 teaspoon cayenne pepper
  • 2 cans diced tomatoes with herbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 15 ounces ricotta cheese
  • 3 cups shredded mozzarella cheese divided
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1 tablespoon dried parsley
  • 1/2 pound lasagna noodles

Directions
  1. Preheat oven to 350 then spray lasagna pan with nonstick cooking spray.
  2. Heat oil in large heavy skillet then add pork and cook 5 minutes stirring often.
  3. Add onion and bell pepper then cook 2 minutes.
  4. Add garlic and cayenne then cook 30 seconds and stir in tomatoes then bring to a boil.
  5. Reduce heat to medium low then simmer 20 minutes or until sauce has thickened.
  6. Stir in salt and pepper.
  7. In large bowl stir together ricotta, 2 cups of the mozzarella, parmesan, egg and parsley.
  8. Spread 1 cup of the tomato mixture over bottom of pan.
  9. Place 3 uncooked lasagna noodles side by side over sauce.
  10. Spread one third of the ricotta mixture over noodles then sprinkle with remaining mozzarella.
  11. Spoon one-half of the remaining tomato mixture over cheese then repeat layers.
  12. Place lasagna noodles in opposite direction with each layer and ending with mozzarella cheese.
  13. Cover and bake 35 minutes or until heated through and sauce is bubbling.
  14. Cool 10 minutes then serve while hot.
