How to make it

  • For the Lamb:
  • Season lamb chops well with herb mixture and salt & pepper
  • Heat oil in a large shallow pot over med high heat
  • Once well heated sear lamb chops until browned, about 4 - 6 minutes depending on thickness
  • Removed and set aside to rest
  • For the Sauce:
  • Deglaze pan with balsamic vinegar scraping up all of the bits on the bottom
  • Add fig pulp, shallots and honey to the pan, bring to a boil then reduce the heat medium low. Whisk frequently until the volume has reduced down to 1/2 cup (about 10 minutes).
  • Spoon sauce over the meat and serve mashed potatoes and veggies. Also makes a great appetizer

    Fabulous! Luv lamb & figs. I have a yummy dessert tucked away, I think would make a wonderful ending to the lamb & fig dish. It's a greek yogurt cake with pistachios, from the L.A. Times.
