Lamb Lollipops With Balsamic And Fig Reduction Recipe

Ingredients

1 lb - Lamb Lollipops (about 8 pieces)

Dryed Herb Mixture – about 1/2 - 1 tsp of each

- Rosemary

- Sage

- Oregano

- Thyme

- Parsley

- Garlic Powder

- Salt & Pepper

2 tbs - Olive Oil

3/4 c - Balsamic Vinegar

* this is an approximate, I didn’t measure just poured

1/2 c - Fig pulp

2 tbs - Honey

1 lg - Shallot, minced

Directions

For the Lamb:

Season lamb chops well with herb mixture and salt & pepper

Heat oil in a large shallow pot over med high heat

Once well heated sear lamb chops until browned, about 4 - 6 minutes depending on thickness

Removed and set aside to rest

For the Sauce:

Deglaze pan with balsamic vinegar scraping up all of the bits on the bottom

Add fig pulp, shallots and honey to the pan, bring to a boil then reduce the heat medium low. Whisk frequently until the volume has reduced down to 1/2 cup (about 10 minutes).

Spoon sauce over the meat and serve mashed potatoes and veggies. Also makes a great appetizer
