Lamb Lollipops With Balsamic And Fig Reduction

- 1 lb - lamb Lollipops (about 8 pieces) shopping list
- Dryed herb Mixture – about 1/2 - 1 tsp of each shopping list
- - rosemary shopping list
- - sage shopping list
- - oregano shopping list
- - thyme shopping list
- - parsley shopping list
- - garlic powder shopping list
- - salt & pepper shopping list
- 2 tbs - olive oil shopping list
- 3/4 c - balsamic vinegar shopping list
- * this is an approximate, I didn’t measure just poured shopping list
- 1/2 c - fig pulp shopping list
- 2 tbs - honey shopping list
- 1 lg - shallot, minced shopping list
How to make it
- For the Lamb:
- Season lamb chops well with herb mixture and salt & pepper
- Heat oil in a large shallow pot over med high heat
- Once well heated sear lamb chops until browned, about 4 - 6 minutes depending on thickness
- Removed and set aside to rest
- For the Sauce:
- Deglaze pan with balsamic vinegar scraping up all of the bits on the bottom
- Add fig pulp, shallots and honey to the pan, bring to a boil then reduce the heat medium low. Whisk frequently until the volume has reduced down to 1/2 cup (about 10 minutes).
- Spoon sauce over the meat and serve mashed potatoes and veggies. Also makes a great appetizer

Fabulous! Luv lamb & figs. I have a yummy dessert tucked away, I think would make a wonderful ending to the lamb & fig dish. It's a greek yogurt cake with pistachios, from the L.A. Times.
