Spicy Roasted Chicken With Cherry Tomatoes Recipe
The combination of flavors really spice up this chicken. I serve it over a bed of cooked linguine (I just love my pasta!), but it can be served with mashed potatoes as well. This serves 4 generously!

Ingredients
  • 2 tablespoons olive oil
  • 1 1/2 pounds cherry tomatoes, cut in half
  • 4 teaspoons garlic, minced
  • 1 1/2 teaspoons red pepper flakes, or to taste
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons dried oregano
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 bone-in chicken breast halves (about 2 pounds)
  • 4 large bone-in chicken thighs (about 2 pounds)
  • Hot cooked linguine, mashed potatoes, etc.

Directions
  1. Preheat oven to 400 degrees.
  2. Grease a shallow roasting pan with 1/2 teaspoon olive oil.
  3. Spread halved tomatoes in pan. Set aside.
  4. Whisk together remaining olive oil, garlic, red pepper flakes, lemon zest, lemon juice, oregano, salt and pepper.
  5. Brush chicken pieces generously with mixture.
  6. Place chicken pieces skin side up on top of tomatoes.
  7. Roast 40 to 45 minutes or until chicken is cooked through. (160 degrees)
  8. Serve over pasta or along side potatoes.
