Spicy Roasted Chicken with Cherry Tomatoes

- 2 tablespoons olive oil shopping list
- 1 1/2 pounds cherry tomatoes, cut in half shopping list
- 4 teaspoons garlic, minced shopping list
- 1 1/2 teaspoons red pepper flakes, or to taste shopping list
- 1 tablespoon lemon zest shopping list
- 2 tablespoons lemon juice shopping list
- 1 1/2 teaspoons dried oregano shopping list
- 3/4 teaspoon kosher salt shopping list
- 1/2 teaspoon ground black pepper shopping list
- 4 bone-in chicken breast halves (about 2 pounds) shopping list
- 4 large bone-in chicken thighs (about 2 pounds) shopping list
- Hot cooked linguine, mashed potatoes, etc. shopping list
How to make it
- Preheat oven to 400 degrees.
- Grease a shallow roasting pan with 1/2 teaspoon olive oil.
- Spread halved tomatoes in pan. Set aside.
- Whisk together remaining olive oil, garlic, red pepper flakes, lemon zest, lemon juice, oregano, salt and pepper.
- Brush chicken pieces generously with mixture.
- Place chicken pieces skin side up on top of tomatoes.
- Roast 40 to 45 minutes or until chicken is cooked through. (160 degrees)
- Serve over pasta or along side potatoes.
