Butternut Squash with Ginger and Cilantro

- 4 lbs. butternut squash,peeled,cut into 3/4" cubes (about 10 c) shopping list
- 1/4 c vegetable oil shopping list
- 2 tsp ground coriander shopping list
- salt and pepper shopping list
- 1/2 c finely chopped crystallized ginger shopping list
- 1/2 c cilantro leaves shopping list
How to make it
- Preheat oven to 450.In a large bowl,tosssquash with oil,coriander,1-1/2 tsp salt and 1/2 tsp pepper. On each of 2 large baking sheets,arrange squash in single layer and bake,turning occasionally until tender and golden brown,about 30 mins
