This is the perfect use up for home made applesauce! I used a rich, thick home made kind made with peel-on, roasted apples, but of course jarred sauce or apple butter are fine!

Ingredients
  • 1 1/4 cups unsweetened applesauce (I used home-made)
  • 2 tbsp fat free soy milk (I used So Good Trim)
  • 1/4 cup agave nectar (or honey for non-vegan)
  • 3/4 cup water
  • 1 tsp maple extract
  • 1 cup whole wheat flour
  • 1/2 cup white flour
  • 2 tbsp spelt (or oat) bran
  • 1/2 cup rolled oats (not instant)
  • 2 tbsp ground flaxseed
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Directions
  1. Preheat oven to 375F, grease 12 muffin cups (lining doesn't work, I find).
  2. In a large bowl combine applesauce, soy milk, agave, water and maple extract.
  3. In another bowl whisk together flours, bran, oats, flaxseed, baking powder, baking soda and spices.
  4. Add to the wet mixture and stir just to combine.
  5. Bake for 20 minutes, turn out immediately and cool on a wire rack.
