How to make it

  • Preheat oven to 375F, grease 12 muffin cups (lining doesn't work, I find).
  • In a large bowl combine applesauce, soy milk, agave, water and maple extract.
  • In another bowl whisk together flours, bran, oats, flaxseed, baking powder, baking soda and spices.
  • Add to the wet mixture and stir just to combine.
  • Bake for 20 minutes, turn out immediately and cool on a wire rack.
