How to make it

  • slice aubergines into 1cm/ 1/2 inch rounds
  • sprinkle them with salt and leave to drain for 30min.
  • rinse well and pat dry
  • meanwhile place the tomatoes in a bowl and cover with boiling water
  • leave for 3 or 4 min or till they are easy to peel
  • peel and chop
  • slice onions and gently fry till golden, set aside
  • gently brown aubergines
  • preheat oven to 190C/375F/gas 5
  • oil a casserole dish and begin with a layer of aubergine
  • sprinkle some onion
  • then tomatoes and then cheese
  • cont with layers ending with a layer of cheese
  • bake for 30-40min or until the cheese is brown and bubbly

    This was really good; thank you. I didn't have any tomatoes so used red capsicums instead. I also added a little garlic.
    I like how simple and tasty this recipe is.
