aubergines with cheese

- 2 large aubergines shopping list
- 1 lb tomatoes shopping list
- 1 onion shopping list
- 5-7 tbl spoons olive oil or a really good glug for the more experienced cook shopping list
- 175g/6oz kosher dutch or cheddar cheese thinly sliced shopping list
- salt and ground black pepper shopping list
How to make it
- slice aubergines into 1cm/ 1/2 inch rounds
- sprinkle them with salt and leave to drain for 30min.
- rinse well and pat dry
- meanwhile place the tomatoes in a bowl and cover with boiling water
- leave for 3 or 4 min or till they are easy to peel
- peel and chop
- slice onions and gently fry till golden, set aside
- gently brown aubergines
- preheat oven to 190C/375F/gas 5
- oil a casserole dish and begin with a layer of aubergine
- sprinkle some onion
- then tomatoes and then cheese
- cont with layers ending with a layer of cheese
- bake for 30-40min or until the cheese is brown and bubbly
