Veal Stuffed Zucchini Recipe
This is a very impressive zucchini dish. Can be served as a side or as a main course. I love this recipe and often substitute out the veal for turkey, chicken, italian sausage or beef. Any combination of the above is greatness. Enjoy

Ingredients
  • 4 medium zucchini halved lengthwise
  • 1 pound ground veal
  • 1/4 cup onion chopped
  • 1 garlic clove minced
  • 1 tablespoon butter
  • 1 small tomato chopped
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon basil
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 cup crunchy nut cereal
  • 8 ounces plain yogurt

Directions
  1. Remove pulp from zucchini then chop and set aside. Parboil zucchini shells in boiling water to cover for 1 minute. Drain and place in shallow baking dish. Saute veal, onion and garlic in butter in skillet for 2 minutes. Add chopped pulp, tomato, parsley, salt, basil and pepper. Saute 5 minutes longer or until zucchini is tender. Add cereal and 1/2 cup of the yogurt. Spoon into shells and bake at 350 for 15 minutes. Serve with remaining yogurt. Sprinkle with additional chopped parsley if desired.
