Veal Stuffed Zucchini

- 4 medium zucchini halved lengthwise shopping list
- 1 pound ground veal shopping list
- 1/4 cup onion chopped shopping list
- 1 garlic clove minced shopping list
- 1 tablespoon butter shopping list
- 1 small tomato chopped shopping list
- 1 tablespoon chopped parsley shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon basil shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 1/2 cup crunchy nut cereal shopping list
- 8 ounces plain yogurt shopping list
How to make it
- Remove pulp from zucchini then chop and set aside. Parboil zucchini shells in boiling water to cover for 1 minute. Drain and place in shallow baking dish. Saute veal, onion and garlic in butter in skillet for 2 minutes. Add chopped pulp, tomato, parsley, salt, basil and pepper. Saute 5 minutes longer or until zucchini is tender. Add cereal and 1/2 cup of the yogurt. Spoon into shells and bake at 350 for 15 minutes. Serve with remaining yogurt. Sprinkle with additional chopped parsley if desired.
