Ingredients
  • 8 oz. dried Orzo pasta
  • 8 oz. ripe cherry tomatoes,quartered
  • Pesto Dressing{SEE BELOW}
  • About1/4 cup Pine NUTs,lightly toasted
  • Fresh basil sprigs
  • About 1 cup fresh basil leaves
  • 2 garlic cloves,peeled
  • about1/4 cup of Pine Nuts
  • 3 tablesspoons xtr-virgin olive oil
  • 1/4 cup freshly grated good Parmeson cheese
  • 3 tblsp. of half & half

Directions
  1. Cook pasta as directions indicate,tender but firm
  2. Drain,rinse with cold water,drain again.
  3. In a bowl,put orzo and add the tomatoes.
  4. PESTO DRESSING:
  5. Combine basil leaves,garlic,pine nuts,and oil in a blender.
  6. Process till smooth.
  7. Turn into a bowl and beat in cheese and the half&half.
  8. Stir dressing into pasta mixture.
  9. Transfer into a serving dish and sprinkle with the toasted pine nuts.
  10. garnish with Basil sprigs.
