Tuna On A Shoestring Salad Recipe
This goes good on a hot day. No need to heat up the kitchen except to boil the eggs, which you can do earlier. My husband and I really like it. Serve it with a roll and you have a meal, Add a dessert only if you want one.

Ingredients
  • 1 can drained tuna
  • 1 cup shredded carrots
  • 1 cup sliced celery
  • 1/4 cup minced onion
  • 1 4oz. can shoestring potatoes
  • Optional ingredients are olives, pickles or hard boiled eggs.
  • I omit the celery since we don't like that.

Directions
  1. Separate tuna into chunks.
  2. Place in large bowl.
  3. Add carrots, celery, onion and mayonaise.
  4. Mix gently.
  5. Cover and chill.
  6. Just before serving, fold in potatoes.

I am going to try this... my granddaughter is a tuna freak! She eats it right out of the can.
