Lovely Salmon With Peach Sauce Recipe
This dish is excellent for impressing company. The sauce compliments the flavor of the salmon wonderfully!

Ingredients
  • 1 half-salmon
  • 1 Tbl olive oil
  • 3/4 C sugar
  • Dash salt
  • 2 Tbl cornstarch
  • 3/4 C orange juice
  • 1 Tbl lemon juice
  • 1 can peaches
  • 1/4 tsp cinnamon
  • 1/4 tsp cloves

Directions
  1. Spread oil on salmon. Cook at 350-400 degrees for 20 to 30 minutes.
  2. After the fish has cooked about ten or fifteen minutes, make the sauce: Combine sugar, salt, and cornstarch. Stir in orange and lemon juices. Add UNDRAINED peaches. Then add the spices. Stir constantly over medium heat until boiling. Let boil 2 minutes.
  3. Pour over salmon. Enjoy!

This sauce sounds heavenly, I love all the fruit and spices! I'll try it over salmon, but I'll also try it over chicken, and exchange the peaches for apples or pears on pork. Thanks for posting it. . . :-)
