I took the triditional recipe and converted it to a Diabetic friendly. The Apricot and the brown sugar give it a fantastic taste. The non- diabetic version was posted by Marge Clark in the Taste of Home Magazine Dec/Jan of 1995.

  • Ingredients:
  • ½ fully cooked ham with bone in ( 5 to 7 pounds)
  • 20 Cloves
  • ½ cup Light or sugar-free Apricot preserves ( Smucker or Equivalent )
  • 3 Tbs. dry mustard
  • ½ cup Splanda brown sugar or equivalent

Directions
  1. Preheat oven at 325.
  2. Score the surface of the Ham with shallow diamond-shaped cuts. Insert cloves into cuts. Combine Preserves and mustard; spread over the ham. Pat brown sugar substitute over the apricot mixture. Place ham on a rack in a roasting pan. Bake at 325 for 20 minutes per pound or until ham is heated through and thermometer reads 140. and ham is heated through.
  3. Serving size: 3-oz
  4. Calories per serving: 182, Fat: 5g, Cholesterol: 47mg, Sodium 540mg, Carbohydrate: 12g
  5. Diabetic Exchanges: 3 lean meat, 1 fruit, 1 fat

  7. NOTE: I have converted this recipe to a low carbohydrate, no added fat and no sugar.
