Stuffed Meatloaf

- For the meatloaf: shopping list
- 700gr ground beef. shopping list
- 1/2 c parsley leaves chopped. shopping list
- 1 small onion shredded. shopping list
- 1 clove garlic pressed. shopping list
- 1/2 c bread crumps. shopping list
- 1 egg. shopping list
- 1/3 c olive oil. shopping list
- 2 tbs whine vinegar. shopping list
- 1 tbs dried thyme. shopping list
- salt and pepper to taste. shopping list
- 1 tbs honey. shopping list
- For the mustard sauce: shopping list
- 1/2 c olive oil. shopping list
- 2 tbs lemon juice. shopping list
- the grated rind of 1 lemon. shopping list
- 3 tbs Dijon mustard ( or type Dijon ). shopping list
- 2 tbs dried oregano. shopping list
- salt and pepper to taste. shopping list
- For the stuffing: shopping list
- 200 gr small white mushrooms halved. shopping list
- 1 ts dried mint. shopping list
- 1 tbs spring onion chopped. shopping list
- 1 clove garlic chopped. shopping list
- salt and pepper to taste. shopping list
How to make it
- Put all the ingredients for the mustard sauce in the blender and beat till you have a smooth paste, put covered in the fridge till use.
- Put 1 tbs olive oil in a nonstick frying pan and saute the mushrooms on low heat till softed and almost all liquid is evaporated.
- Put in a bowl with the other ingredients for the stuffing + 3 tbs mustard sauce and mix well, put covered in the fridge till use.
- In a big bowl we put all the ingredients for the meatloaf and knead till we have a firm dough, wetting from time to time your hands .
- Put 15 min in the freezer.
- Preheat oven to 200 C.
- We brush a baking dish with form of a bread all over with olive oil.
- Put in the meat mix and press in the middle so that the sides are covered with meat ca 2 cm thick.
- Fill in the middle with stuffing and close the meat carefully.
- Mix half of the mustard sauce with the honey and brush the top of the meatloaf with it.
- Bake 35 minutes and serve with the rest of the mustard sauce.
- Goes fine with a green salad and mashed potatoes.

I like this, After reading,I would like these flavors with ground Lamb. For those that are wandering how to convert to onces. Just multiply 700 X 0.035273962 this = just about 1 1/2 pounds.
