  • For the meatloaf:
  • 700gr ground beef.
  • 1/2 c parsley leaves chopped.
  • 1 small onion shredded.
  • 1 clove garlic pressed.
  • 1/2 c bread crumps.
  • 1 egg.
  • 1/3 c olive oil.
  • 2 tbs whine vinegar.
  • 1 tbs dried thyme.
  • salt and pepper to taste.
  • 1 tbs honey.
  • For the mustard sauce:
  • 1/2 c olive oil.
  • 2 tbs lemon juice.
  • the grated rind of 1 lemon.
  • 3 tbs Dijon mustard ( or type Dijon ).
  • 2 tbs dried oregano.
  • salt and pepper to taste.
  • For the stuffing:
  • 200 gr small white mushrooms halved.
  • 1 ts dried mint.
  • 1 tbs spring onion chopped.
  • 1 clove garlic chopped.
  • salt and pepper to taste.

Directions
  1. Put all the ingredients for the mustard sauce in the blender and beat till you have a smooth paste, put covered in the fridge till use.
  2. Put 1 tbs olive oil in a nonstick frying pan and saute the mushrooms on low heat till softed and almost all liquid is evaporated.
  3. Put in a bowl with the other ingredients for the stuffing + 3 tbs mustard sauce and mix well, put covered in the fridge till use.
  4. In a big bowl we put all the ingredients for the meatloaf and knead till we have a firm dough, wetting from time to time your hands .
  5. Put 15 min in the freezer.
  6. Preheat oven to 200 C.
  7. We brush a baking dish with form of a bread all over with olive oil.
  8. Put in the meat mix and press in the middle so that the sides are covered with meat ca 2 cm thick.
  9. Fill in the middle with stuffing and close the meat carefully.
  10. Mix half of the mustard sauce with the honey and brush the top of the meatloaf with it.
  11. Bake 35 minutes and serve with the rest of the mustard sauce.
  12. Goes fine with a green salad and mashed potatoes.

I like this, After reading,I would like these flavors with ground Lamb. For those that are wandering how to convert to onces. Just multiply 700 X 0.035273962 this = just about 1 1/2 pounds.
