CRAB-FILLED VEGGIE BITES - DIABETIC

- Ingredients: shopping list
- 12 cherry tomatoes shopping list
- 12 fresh snow peas shopping list
- 1 can ( 5 – 6 -oz ) crab-meat, drained, flaked and cartilage removed or 1 cup imitation crab-meat chopped finely shopping list
- 2 Tbs. reduced-fat cream cheese shopping list
- 1 Tbs. finely chopped green onion shopping list
- 2 tsp. reduced-fat sour cream shopping list
- 2 tsp. chili sauce shopping list
- 1 tsp. lemon juice shopping list
- ½ tsp. Prepared horseradish shopping list
How to make it
- 1)Cut the top off each tomato; scoop out the pulp with a small spoon and discard. Invert tomatoes on paper towels to drain; let stand for 1 – 3 hours.
- 2)Place 1-inch of water in a saucepan; add snow peas. Bring to a boil.. Reduce heat; cover and simmer for 1 – 2 minutes or until crisp-tender. Drain and immediately place peas in ice water. Drain and pat dry; refrigerate.
- 3)In a bowl, combine the remaining ingredients; mix well. Using a sharp knife, make a slit down the side of each pea-pod. Fill peas and tomatoes with crab mixture. Arrange on a serving platter; cover and refrigerate for at least 30 minutes.
- Serving size: 3 filled tomatoes and 3 filled snow peas

I Like the stuffed snow pea pod idea. Like little boats. You could make a sail out of a thin slice of cucumber and a tooth pick. \0
