How to make it

  • Preheat oven to 350. Butter and flour 9x5" loaf pan;set aside.
  • In small saucepan,heat whipping cream over med. heat just till hot.
  • Remove from heat;add chocolate. Stir until chocolate is melted. Let stand till completely cool.
  • Meanwhile,in bowl,beat 1/2 c butter with electric mixer on medium speed 30 seconds. Add 1 c brown sugar;beat on high till fluffy,about 2 mins,scraping bowl occasionally. Beat in eggs and vanilla. Beat in cooled chocolate mixture until smooth.
  • Combine flour,cocoa,baking powder and baking soda;add to butter mixture. Beat on medium till well combined,1 to 2 mins. Pour in prepared pan;smooth with spatula.
  • Bake 45 mins or till toothpick comes out clean. While loaf bakes,prepare Butterscotch Glaze. Cool loaf in pan on rack 10 mins. Remove from pan;cool completely Pour half Butterscotch Glaze on loaf and pass the remaining glaze.
  • Butterscotch Glaze: In skillet,combine 1/2 c brown sugar,1 Tbs lemon juice,3 Tbs water and 3 Tbs unsalted butter;cook and stir over medium heat till sugar dissolves,about 1 min. Stir in 1/2 c sliced kumquats;1 tangerine,sliced and seeded;and 1/4 c cranberries. Cook,stirring frequently,just till kumquats start to soften,about 3 mins. Remove from heat.
