Pork With Pine Nut Orzo And Strawberry Spinach Salad

- 1/2 pound orzo pasta shopping list
- 1/2 cup balsamic vinegar shopping list
- 1 pint strawberries quartered shopping list
- 1/2 cup basil leaves torn shopping list
- 1 cup baby spinach leaves shopping list
- olive oil shopping list
- 4 thin slices of prosciutto shopping list
- 4 pork chops or thin pork tenderloin shopping list
- 3 tblsp butter shopping list
- a pinch of cinnamon shopping list
- a pinch of nutmeg shopping list
- 1/3 cup pines nuts toasted shopping list
How to make it
- Bring a large of water to boil, add pasta and drain( i like to add a little olive oil so the pasta wont stick)
- In a saucepan, boil the balsamic vinegar until reduced to 2 or 3 tablespoons,about 5 minutes
- In a bowl toss the strawberries with the spinach and basil and add balsamic glaze
- In a large skillet add olive oil and cook prosciutto about 5 minutes and transfer to paper towels
- Add another bit of olive oil, season chops and add to pan tuning once untill cooked through about 8 minutes
- In another large skillet heat the butter until brown and then add the orzo and cinnamon and nutmeg. Toss with pine nuts.
- Spoon the salad over the chops and top with orzo and prosciutto.
