Ingredients
  • 1 1/4 cup sifted flour
  • 2 eggs, slightly beaten
  • 4 tablespoons sugar
  • 1/4 cup milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cup cold cooked rice
  • Vegetable oil
  • 1/4 teaspoon salt
  • Confectioners sugar

Directions
  1. Mix together dry ingredients
  2. Add eggs, milk, and rice
  3. Mix until well blended
  4. Drop batter by tablespoonful into hot oil 1 1/2" deep
  5. Fry turning several times about 5 mins
  6. Drain and sprinkle with Conf. sugar
  7. Serve with syrup or thinned preserves
