Ingredients

How to make it

  • White Chili
  • Soak 1 pound of navy beans overnight
  • drain the next day
  • Combine beans with 10 cups of chicken broth, 2 cloves of garlic, and 1/2 of the 2 chopped med onions in a large pot and bring to a boil
  • Reduce heat and simmer until beans are soft ( about 2 hours). Add more broth as necessary.
  • In a skillet saute second 1/2 of onions in 1 Tablespoon of oil until tender
  • Add 2 4oz cans of sliced green chilies
  • 3 cans of tomato quarters and juice from tomatoes,2 tsp camino,1 1/2 tsp oregano, 1/4 tsp cloves 1/4 tsp cayanne pepper. Mix thoroughly add to bean mixture.
  • Add 4 cups of diced cooked chicken and continue to simmer 1 hour. Add salt to taste.
  • Garnish with cheese and sauted onions. ~enjoy~

    similar to what my 'Nana' cooked for us
    so long ago~ She was born and raised in
