Crustless Quiche Using Leftovers

- 4 eggs shopping list
- 2 1/2 oz cheese, shredded shopping list
- 1/4 c evap milk shopping list
- 2 oz crumbled bacon or other cooked meat shopping list
- pinch of nutmeg shopping list
- enough leftover sauteed veggies (broccoli, spinach, cauliflower, etc.) to fill up the ramekins shopping list
- cooking spray in 4 baking ramekins shopping list
How to make it
- Combine first 6 ingredients and pour equally into 4 pre-sprayed baking ramekins.
- Add enough cooked veggies to fill ramekins to top.
- Cook in toaster oven (or regular oven) at 350 degrees for 30-45 min or until knife comes out clean.
- CEAHOW Note: Each serving contains 1 protein, 1/2 c. veggies
