Crustless Quiche Using Leftovers Recipe
This is an easy way to use up leftovers, and the individual servings make it easy to include in lunches. If you have LOTS of leftovers, the recipe multiplies well.

Ingredients
  • 4 eggs
  • 2 1/2 oz cheese, shredded
  • 1/4 c evap milk
  • 2 oz crumbled bacon or other cooked meat
  • pinch of nutmeg
  • enough leftover sauteed veggies (broccoli, spinach, cauliflower, etc.) to fill up the ramekins
  • cooking spray in 4 baking ramekins

Directions
  1. Combine first 6 ingredients and pour equally into 4 pre-sprayed baking ramekins.
  2. Add enough cooked veggies to fill ramekins to top.
  3. Cook in toaster oven (or regular oven) at 350 degrees for 30-45 min or until knife comes out clean.
  4. CEAHOW Note: Each serving contains 1 protein, 1/2 c. veggies
