Greek  Roasted Lamb Skewers Recipe
If you can cut the lamb right of the leg of lamb, its seems more tastier than buying the lamb stew meat. Simple but delcious flavored with lemon and oregano. Serve with roasted potatoes

Ingredients
  • 1 lb lamb chunks per person ( cut from a leg of lamb if possible )
  • fresh lemons
  • oregano, fresh chopped
  • Salt and Pepper

Directions
  1. Rinse meat, pat dry and place meat on skewers and grill over medium heat until almost cooked medium, perhaps and hour.
  2. Then salt and pepper to taste, sprinkle with oregano.
  3. When almost done, remove spits to a platter and heavily squeeze on fresh lemon juice, return to fire and lower heat, roasting until done.

I love lamb. Since my husband doesn't, I usually hoard a few lamb chops in the freezer and enjoy them when he is gone. Thanks for the recipe - it brings back wonderful memories of my childhood.
