How to make it

  • Chop celery, bell pepper, and onions. Chop ham or bacon into 1/2" pieces.
  • In a stockpot, cook ham in oil until lightly browned, or if using bacon, cook bacon until golden. Drain all but 2 tablespoons of grease.
  • Add celery and bell pepper; saute for 5 minutes. Add onion and saute 3 more minutes.
  • Add flour and cook 1 minute, stirring.
  • Gradually add broth, stirring constantly utnil thickened.
  • Heat oven to 425.
  • Bring vegetable mixture to a boil and add greens. Return to a boil and then turn down to a simmer for 10-15 minutes, stirring frequently.
  • Meanwhile, combine cornmeal, flour, and sugar. Add egg, oil, and buttermilk.
  • Drain and rinse peas; add peas and seasonings to turnip greens. Cook another 5 minutes.
  • Pour into sprayed 3qt glass casserole. Top with cornmeal mixture.
  • Bake for 20-25 minutes.
