Ingredients
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons olive oil, divided use
  • 1 cup sliced fresh mushrooms
  • 2 teaspoons corn starch
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/2 teaspoon dried sweet basil
  • 1/2 teaspoon onion powder

Directions
  1. Between 2 pieces of waxed paper, pound the chicken to 1/4 inch thickness
  2. Combine flour, salt, garlic powder and pepper in a large bowl
  3. Add chicken and coat
  4. Heat 2 tablespoons olive oil in a large skillet over medium-high heat
  5. Cook chicken 8-10 minutes, turning once
  6. Remove from pan and keep warm
  7. Add the remaining 1 tablespoon olive oil and the mushrooms to the skillet
  8. Saute 2-3 minutes
  9. Mix corn starch, wine, basil and onion powder
  10. Add to mushrooms and simmer, uncovered, 2 minutes or until thickened
  11. Serve chicken and sauce over cooked linguine, if desired
