How to make it

  • Between 2 pieces of waxed paper, pound the chicken to 1/4 inch thickness
  • Combine flour, salt, garlic powder and pepper in a large bowl
  • Add chicken and coat
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat
  • Cook chicken 8-10 minutes, turning once
  • Remove from pan and keep warm
  • Add the remaining 1 tablespoon olive oil and the mushrooms to the skillet
  • Saute 2-3 minutes
  • Mix corn starch, wine, basil and onion powder
  • Add to mushrooms and simmer, uncovered, 2 minutes or until thickened
  • Serve chicken and sauce over cooked linguine, if desired
