Ingredients
  • 6-7 large potatoes, diced
  • 1 onion,diced
  • 100g bacon, diced
  • 1 1/2 cups miracle whip, but mayonnaise will work also
  • 1 tsp sugar
  • 2 Tbsp honey mustard
  • 2 Tbsp american mustard
  • 1 tsp paprika
  • 1/2 cup green onions
  • 4 large hard boiled eggs,diced
  • salt and pepper, to taste

Directions
  1. Boil potatoes until soft but still hold their shape, drain water and place in a large bowl
  2. Fry bacon and onions until golden, place on paper towel and pat dry, add to potatoes
  3. Add diced hard boiled eggs to large bowl
  4. DRESSING"
  5. in a seperate bowl mix miracle whip, sugar, mustards and paprika until well combined
  6. When potatoes have cooled completely combine with dressing
  7. Roughly chop green onions and mix through
  8. note: i can usually make 2 batches out of the dressing so add slowly.
