How to make it

  • Mix water, lemon juice, salt & pepper and bring to a boil.
  • Heat fryer to 370 degrees (you need enough oil to cover the legs)
  • Boil the legs in water mixture for 5 minutes.
  • Drain the water, and pat the legs dry.
  • Dip the legs in the eggs, then cover in the crumbs.
  • Drop them in the hot oil.
  • Let fry for 2-3 minutes, or until they're golden brown and tender.

    Skip the eggs and bread crumbs. They're good skinned and fried. Salted, of course. Haven't had them in years.
