How to make it

  • Preheat oven to 350 Degrees.
  • Melt butter in a skillet.
  • Brown the doves in the skillet.
  • Transfer doves to a baking dish, breast side down.
  • Add flour to the skillet, stir well.
  • Slowly add broth, sherry, salt & pepper.
  • Blend the sauce well.
  • Pour over doves.
  • Cover and bake for 1 hour.

    Yep... the whole bird (cleaned of course) why waste anything? I'm sure that you could substitute just the breast, tho.
