Traditional Southern cornbread. My grandma always makes this with black eyed peas on New Year's day! Delicious with pretty much any soup.

Ingredients
  • 1 C. Flour
  • 4 Tbs. Baking Powder
  • 1 tsp. Salt
  • 1C. Cornmeal
  • 2 eggs, beaten
  • 1/4 C. bacon drippings
  • 1 C Milk
  • 3 Tbs. sugar

Directions
  1. Preheat oven to 425 Degrees.
  2. Grease the bottom and side of a cast-iron skillet, then put it in the oven while you make the batter.
  3. Sift flour, baking powder and salt into a bowl.
  4. Add the cornmeal and blend with a spoon.
  5. Add the eggs, drippings, milk and sugar.
  6. Lightly stir until blended.
  7. Remove skillet from the oven and pour in the batter.
  8. Bake for 20 minutes or until a toothpick poked into the center comes out clean.
  9. Variation: For jalapeno cheese cornbread, Add 3/4 C. grated cheddar cheese and 1 small can of diced jalapenos (drained)
