VEGETABLE KABOBS WITH RICE DIABETIC FRIENDLY

- Ingredients: shopping list
- ½ cups Italian Light salad dressing ( Diabetics Fat-Free Italian dressing ) shopping list
- 1 Tbs. minced fresh parsley shopping list
- 1 Tbs. dried basil shopping list
- 2 medium yellow squash, cut into 1-inch pieces shopping list
- 8 small boiling onions, peeled shopping list
- 8 cherry tomatoes shopping list
- 8 medium fresh mushrooms shopping list
- 2 cups hot cooked rice ( for a lower carbohydrate use Brown or Long grain ) shopping list
How to make it
- In a small bowl, combine dressing, parsley and basil. Alternate the vegetables on eight skewers. Place on a grill rack over medium-hot coals. Baste with dressing mixture and turn frequently for 15 minutes or until vegetables are tender. To serve, place ½ cup rice on each plate and top with two kabobs.
