Pan-seared Catfish With Steamed Vegetables And Citrus Sauce

- 2 teaspoons canola oil shopping list
- 1 pound skinless US farm-raised catfish shopping list
- 1/4 teaspoon pepper shopping list
- 1/8 teaspoon salt shopping list
- 12 asparagus spears, trimmed shopping list
- 1 cup sugar-snap peas shopping list
- 1/2 red bell pepper cut into 1 1/2x1/2 inch strips shopping list
- 1/4 cup water shopping list
- 1/2 cup orange juice shopping list
- 1/4 cup lemon juice shopping list
- 2 teaspoons cornstarch shopping list
- 1 teaspoon light soy sauce shopping list
- 1/2 teaspoon ground ginger shopping list
How to make it
- Pour oil into a large skillet and heat over medium-high heat
- Arrange fish in a single layer in pan and season with salt and pepper
- Cook 2-3 minutes on each side or until lightly browned and fish is opaque
- Remove fish to a serving platter and keep warm
- Add vegetables and water to same pan
- Cover and cook over medium-high heat, allowing vegetables to steam 3-4 minutes or until they are crisp-tender
- Remove cover and allow any excess liquid to evaporate
- Remove vegetables and arrange on platter around fish
- Combine orange juice,lemon juice, cornstarch, soy sauce and ginger
- Pour mixture into pan and cook, stirring constantly, until thickened and bubbly
- Spoon citrus sauce over fish and vegetables
