Frosted Oats

- 4 cups old-fashion oatmeal shopping list
- 1 1/2 tsp. cinnamon shopping list
- 1/2 tsp. salt shopping list
- 1/4 lb. butter or margarine shopping list
- 1 cup apple jelly - actually any clear jelly, will work but you could end with some odd colors. Apple has good flavor with little color. Also maple syrup, molasses and others work well. Do not use sugar-free syrups for this. shopping list
How to make it
- Oven to 350 degrees; position the rack to the top tier..
- Combine oatmeal, cinnamon, and salt in a large mixing bowl.
- Melt the butter; heat the jelly until it flows easily (I use my microwave for this, but I do not think that qualifies it as a microwave recipe. Microwave or stovetop requires separate pans or cups for the butter and jelly )
- Drizzle the melted butter on the oatmeal mixture; mix well.
- Drizzle the liquid jelly on the oatmeal; mix well.
- Spread evenly in a large, lightly oiled jelly roll pan.
- Place in oven; bake 10 minutes, remove from oven to stir to heat evenly - repeat the 10-minute cycle until it has baked 30 minutes.
- Return to oven after the 30-minute stir, but place a small portion on a paper towel or something and let cool a minute. If it does not harden; bake another 10 minutes. It should easily crumble into individual oat kernels. This is crunchy, but not hard.
- Remove from oven, let cool, break it up as desired. Seal in jars or plastic bags - humidity will turn it into a sticky mess.
- Eat as is, or as a sugar-coated breakfast cereal, or maybe as a base for your own granola mix.
