Avacodo and goat cheese dip

- 2 large avacodos shopping list
- 1 large pkg goat cheese (8 oz.) shopping list
- 1/4 large red onion fine choped shopping list
- 3 cloves garlic fine chopped shopping list
- 1 shallot chopped shopping list
- 1 tsp cajun spice shopping list
- 1 tblspn garlic salt shopping list
- 3oz cilantro fine chopped shopping list
- sliced almonds shopping list
- juice of 1 lime shopping list
- fresh ground black pepper shopping list
- 2 tblspn olive oil shopping list
- (optional 1 hot red chili pepper or more ) shopping list
- 1 pkg mixed color bell peppers or 3 red bell peppers shopping list
- raspberry balsamic vinegar shopping list
How to make it
- allow cheese to come to room temp
- peal and seed avacodo and cut to smaller pieces
- add every thing else except bell peppers and balsamic vineger
- combine in bowl, mash and mix until a smooth consistancy is achived
- blanch bell peppers in boiling water for 2 min
- slice and core peppers
- place pepper strips on cookie sheet
- roast in oven 20 min at 400
- remove from oven drizzle with rapsberry balsamic vinegar
- serve with your favorite crackers
- a little dip a little pepper yummmmmmmmmmmm
