Crumpets

- 450 g plain white flour (or 500 g for pikelets) shopping list
- 350 ml warm milk shopping list
- 350 ml warm water shopping list
- 5 g powdered yeast shopping list
- 10 g salt shopping list
- 1 tsp baking powder shopping list
How to make it
- Whist the flour, milk, water and yeast in a large mixing bowl.
- Cover with cling-film and leave for an hour (or more) until very bubbly.
- When ready to cook, gently whisk in the salt and baking powder.
- Cook in a lightly-greased, heavy-based frying pan using crumpet rings (or make thicker batter with the extra 50 g flour if you don't have them). Place the ring on the pan and fill to just below to top.
- Cook for 5 minutes on each side. As it cooks, large bubbles should appear on the top. If they don't appear, whisk in a little more water.
- Eat immediately with butter or cool on a wire rack to toast later.
