How to make it

  • Whist the flour, milk, water and yeast in a large mixing bowl.
  • Cover with cling-film and leave for an hour (or more) until very bubbly.
  • When ready to cook, gently whisk in the salt and baking powder.
  • Cook in a lightly-greased, heavy-based frying pan using crumpet rings (or make thicker batter with the extra 50 g flour if you don't have them). Place the ring on the pan and fill to just below to top.
  • Cook for 5 minutes on each side. As it cooks, large bubbles should appear on the top. If they don't appear, whisk in a little more water.
  • Eat immediately with butter or cool on a wire rack to toast later.
