Potato-Crusted Beef And Veal Loaf

- 1 large yellow onion shopping list
- 1 large green pepper shopping list
- 1large red pepper shopping list
- 3 garlic cloves shopping list
- 1 lb. lean ground beef shopping list
- 1 lb. ground veal. shopping list
- 1 large egg,beaten.1/2 cup bottled chili sauce. shopping list
- 1 cup seasoned dry bread crombs. shopping list
- 1 1/2 cups shredded chedder (or any cheese) shopping list
- 1/2 tsp. fresh ground black pepper shopping list
- 1 lb. ruuset baking potatoes.,peeled,cooked,kept hot shopping list
- 1/4 cup chives,minced. shopping list
- 2 tbsp. unsalted butter,melted. shopping list
How to make it
- PREHEAT YOUR BROILER
- Place the onion,bell peppers,and garlic cloves on a aking sheet.
- BROIL these 3 inches from heat for about 7 minutes until blackened,turning frequently.
- Transfer to a paper bag.Close tightly.Let stand 15 minutes or till soft.
- Scrape off outside skins.
- Chop the onion and garlic.
- Seed and chop the peppers.
- You will have about 2 cups of vegetables..
- PREHEAT OVEN to 350.
- Spray a 12 X 7 inch loaf pan with cooking spray.
- In a large bowl,mix together beef,veal,egg,chili sauce with the vegetbles,breadcrumbs,black pepper and 1/2 of the cheese.
- Mix with your hand till well combined.
- Pat into the loaf pan,mounding slightly in the center.
- In a small bowl whip the potatowes with the remaining cup of cheese,chives,and butteruntil fluffy and spoon or pipe onto top and sides of the meatloaf.
- BAKE one hour or until a meat thermometer in the center of he meat registers 145.
- Allow to stand for 19 minutes before serving.
- A nice salad completes the meal!Will serve 4-6.
