How to make it

  • Place the onion,bell peppers,and garlic cloves on a aking sheet.
  • BROIL these 3 inches from heat for about 7 minutes until blackened,turning frequently.
  • Transfer to a paper bag.Close tightly.Let stand 15 minutes or till soft.
  • Scrape off outside skins.
  • Chop the onion and garlic.
  • Seed and chop the peppers.
  • You will have about 2 cups of vegetables..
  • PREHEAT OVEN to 350.
  • Spray a 12 X 7 inch loaf pan with cooking spray.
  • In a large bowl,mix together beef,veal,egg,chili sauce with the vegetbles,breadcrumbs,black pepper and 1/2 of the cheese.
  • Mix with your hand till well combined.
  • Pat into the loaf pan,mounding slightly in the center.
  • In a small bowl whip the potatowes with the remaining cup of cheese,chives,and butteruntil fluffy and spoon or pipe onto top and sides of the meatloaf.
  • BAKE one hour or until a meat thermometer in the center of he meat registers 145.
  • Allow to stand for 19 minutes before serving.
  • A nice salad completes the meal!Will serve 4-6.
